The Craft of Roasting Behind Every Sum>One Cup

Before the first sip, before the barista, before the bag is even opened, someone made a decision. A grower in Carmo de Minas chose the elevation. A farmer in Huila tended the plant through harvest. And when those beans arrive at our roastery, the decision-making does not stop. It shifts to us.
Roasting is where we honor what the grower started.

The Bean Already Has a Story

Every batch begins with green coffee pulled from origins we know by name. These are not anonymous commodity lots. They come through our Project DIRECT relationships; direct trade partnerships built on the same care we put into the cup itself. Colombia. Ethiopia. Guatemala. Each origin carries its own character before we ever apply heat.

That character is what we are working to reveal, not overwrite.

Three Phases, One Conversation

The roasting cycle at Sum>One moves through three phases. Think of it less as a technical sequence and more as a conversation with the bean.

The Drying Phase
Green coffee holds moisture. The first phase draws it out slowly, steadily. Nothing dramatic happens here. But skip it or rush it, and everything that follows suffers. This phase is patience made practical.

The Maillard Phase
Here is where the bean starts to speak. Sugar browning kicks in. Color shifts. Aroma begins to build. The natural complexity of the origin, the volcanic soil of Guatemala, the high altitude of Colombia, starts to show itself. We listen closely in this phase.

The Development Phase
This is where intention becomes flavor. We push the sugar browning further, drawing out sweetness, encouraging the coffee to open up and become as soluble as possible. Solubility shapes extraction, and extraction shapes the cup your customer holds. Every decision in this phase is made with that cup in mind.

We Taste. We Adjust. We Try Again.

Getting a roast profile right takes more than one attempt. We start with test batches and cup them internally, looking honestly at what is landing and what is not. Too flat on sweetness? We adjust. A nuance profile not coming through? We go back in.

This is how Open Mic found its harmony across Ethiopia, Colombia, and Guatemala. How Group Chat landed on that balance of orange zest brightness and deep cocoa finish. How every blend in the Sum>One family developed a personality distinct enough to stand on its own.

The three phases are the tool. The tasting is the work.
