Chemex Instructions

Beautifully designed and American-made, the Chemex has been an icon in the coffee world since its creation in the 1940s. Lauded for its design and the clean, nuanced coffee it brews, the Chemex makes great coffee for one or a small group.

12oz 25g 400g (ml)
16oz 32g 520g (ml)
24oz 48g 800g (ml)
To brew larger volumes, use 1g of coffee for every 16g(ml) of water. Grind slightly coarser for larger volumes.

What you'll need

  • Chemex (6 or 8 cup model)
  • Chemex filters
  • Gram scale
  • Timer
  • Spoon or stir stick
  • Grinder
  • Gooseneck kettle
  • Filtered water
  • Freshly roasted coffee

Recommended Grind - Medium-Fine

STEP 1

Place the filter three-ply side toward the spout, then rinse generously with hot water.  Grind 48 grams (about 8tbsp) coffee medium-fine, like the consistency of black pepper.

STEP 2

Carefully empty the rinse water and set the Chemex back on your scale. Add the coffee, start the timer, and start pouring just enough water (50-100g) to bloom the coffee.

STEP 3

Bloom the coffee with 100 grams of 200-degree water. Wait around 45 seconds to let the coffee degas.

STEP 4

Next, add water in 100-gram increments pulse pour slowly in a spiral motion, adding water in 100g increments, until you reach 800 grams.

STEP 5

Discard the filter and coffee grounds when the water has drained through.  Swirl the coffee, pour, and enjoy.
