Pour-over devices allow the user to control every aspect of the brewing process. Whether you’re using the classic Chemex, Kalita Wave or Hario V60, use this guide as a starting place to brew great coffee at home.
You’ll need:
Pour-over brewer
Matching filters
Gram scale
Timer
Spoon or stir stick
Grinder
Gooseneck kettle
Filtered water
Freshly roasted coffee
Generously rinse the filter to remove any paper taste, then discard the rinse water.
Grind the coffee medium-fine, similar to the consistency of black pepper. Add it to the brewer and tare the scale.
Start the timer and pour just enough water (50–100 grams) to bloom the coffee. Stir gently to ensure even saturation.
At 55 seconds, pulse pour slowly in a spiral motion, adding water in 100g increments, until you reach the target volume.
Discard the filter and coffee grounds when the water has drained through. Swirl the coffee, pour and enjoy.

To brew larger volumes, use 1g of coffee for every 16g(ml) of water. Grind slightly coarser for larger volumes.
